Circuit Breaker w Rainbow // #3 // Red Bean Coconut Pudding
Chanced upon this recipe on youtube and decided to give it a try!
Ingredients
100g red bean
Mixture 1
400g coconut milk
100ml fresh milk
140g sugar
1 pinch of salt
Mixture 2
120g corn flour
400ml water (or the red bean water)
Steps
1. Soak the red beans with water overnight, based on the video recommendation is to leave it in the fridge.
2. The next day, drain out the water place the red beans in a pot. Fill the pot with water (the more the merrier so that it doesn't dry up as we will be cooking the red beans for quite some time).
3. Boil for 10mins, off fire and stew for 10mins. Repeat this for about 4 times or until your preferred softness of the red beans.
4. When the red beans are ready, leave it aside and prepare the mixtures.
5. Prepare Mixture 1 with coconut milk, fresh milk, sugar and salt.
6. Prepare Mixture 2 with corn flour and water. This is super important in giving the pudding texture. I replaced water with the red bean water for better "colouring".
7. Heat up Mixture 1 in the pan.
8. Gradually, while stirring, pour in Mixture 2.
9. Stir around the mixture until the texture changes.
10. Once the texture starts to solidify a little, pour in the red beans and eventually distribute around the mixture.
11. Pour into a mould or a container.
12. Leave it in the fridge to chill for 6-8 hours.
