Not sure why I started to want to make Tao Suan and here's the recipe after multiple attempts to get the taste, texture and even the colour right. Ingredients (adapted from a friend's recipe and tweaked accordingly) 200g mung beans 3 tablespoon   Sweet Potato Flour 1 teaspoon      Corn Flour 5 - 6 leaves     Pandan (tie into bundle) 1 litre              Water 3/4 cup            Fine Sugar (more/less to preference)  1 tablespoon    Red Sugar Steps 1. Wash and rinse the mung beans. 2. Soak the mung beans for 2 hours. 3. Get ready the steamer. Preferably lay the mung beans on breathable base. 4. Surround the base with slices of pandan leaves. 5. Spread the mung beans around the base (make sure they are not pressing on each other) and steam for 45mins. Circuit Breaker w Rainbow // #3 // Red Bean Coconut Pudding

Image
Chanced upon this recipe on youtube and decided to give it a try! Ingredients 100g red bean Mixture 1 400g coconut milk 100ml fresh milk 140g sugar 1 pinch of salt Mixture 2 120g corn flour 400ml water (or the red bean water) Steps 1. Soak the red beans with water overnight, based on the video recommendation is to leave it in the fridge.                                            2. The next day, drain out the water place the red beans in a pot. Fill the pot with water (the more the merrier so that it doesn't dry up as we will be cooking the red beans for quite some time). 3. Boil for 10mins, off fire and stew for 10mins. Repeat this for about 4 times or until your preferred softness of the red beans. 4. When the red beans are ready, leave it aside and prepare the mixtures. 5. Prepare Mixture 1 with coconut milk, fresh milk, sugar and salt. 6. Prepare Mixture 2 with corn flour and water. This is super important in giving the pudding texture. I replaced w
